3/4 cold water
1 tsp baking powder
2 eggs
1 3/4 cups Only Oats flour
1 1/2 cups rice flour
On high speed, mix water, baking powder and eggs. Continue mixing and add both flours. Roll dough on counter in oat flour to form a soft ball.
Roll dough to about an 8 circle, place on cookie sheet and bake for 5 minutes at 350. Remove from oven. Spread Italian tomato sauce over crust, top with 3 tomato slices, 3 chopped artichoke hearts and sprinkle with mozzarella cheese. Put back in the oven till the cheese is bubbly and pizza is hot throughout.
Use your imagination and fix with your favorite toppings!
Flatten each portion to a 4 circle about ½ thick. Place on preheated pizza stone and bake at 350 for 15 minutes. OR: place in frying pan with ½ hot oil and cook on both sides until nice and brown. Cut in half and layer with your favorite sandwich fixings.
