Breakfast Crepes

Crępes

3/4 cup Only Oat™ flour
3/4 cup rice flour
1 egg
2 cups cup milk
1/2 tsp salt

Mix all ingredients ‘till smooth. Pour 1 ladle of mixture into hot pan and tilt to flow over whole pan evenly. Brown lightly on both sides.

Filling

1/4 cup cooked steel cut oats
2 strips Maple bacon, chopped
3 eggs
1/4 cup milk
Green onion, salt and pepper to taste

Sizzle chopped bacon till crisp. Wisk together eggs, milk, salt and pepper. Add egg mixture, steel cut oats, and green onion to bacon in frying pan. Scramble and stir till eggs are cooked. Place hot egg/oat mixture in the middle of crępe and roll to finish.

Makes 3 servings.
